Sweet Cinnamon Almonds

 Almonds are a low carb, high-protein snack that really satisfy the munchies. This Keto friendly, sugar-free recipe for Cinnamon Almonds hits the spot when you need a little something sweet. They are also delicious chopped and used as a topping for salads and ice cream 🍨 

What I love most about munching on these are the crunchy texture and the delightful cinnamon taste. It’s a winning combination and we are sure your whole family will enjoy this stevia sweetened recipe. Ours does.... and we have some picky eaters. 

Feel free to use any nuts you desire. Although we haven’t tried other nuts, we are sure this base recipe will be good with any varity you choose. Keep in mind the cooking timing as almonds are more dense and take more time to “roast”. You may need to adjust the timing if using a lighter nut like pecans.

Sweet Cinnamon Almonds

yields 1 1/5 cups
Ingredients:
1 1/2 C Raw Almonds
2 TB Water
2 ts. Cinnamon Powder
1/16 ts. Salt or 2 smidgen scoops
1/4 C. *Powdered Stevia Baking Blend *place blend into a high-speed Bullet to make into powder
1 ts Vanilla Extract
1/2 ts Cinnamon Stevia
 
Directions:
  1. In a med. sauce pan, heat water, stevia baking blend, salt, and cinnamon powder. Bring to a boil for 2 min. allowing ingredients to melt together.
  2. Turn off heat and add the vanilla extract & cinnamon stevia. Stir to combine, then stir in the nuts to coat.
  3. Turn on heat again until you reach a low simmer. Cook nuts, stirring continuously. Watch carefully as they can burn. Almonds will begin to brown along the edges (the coating should just be caramelized and browning but not burnt). This will take approx 6 min. at least that was my timing. It will vary depending on stove top heat & pan.
  4. Line a cookie sheet with parchment paper and spread nuts out to cool. The closer they are the more they will cluster together.
  5. Allow to cool completely, approx 30 min. before storing in a plastic bag or glass covered container.
