Low Carb Keto Mock Cinnamon Apples


The ultimate apple replacement for all your low carb Keto baking needs. Try these in Muffins, cakes, and for topping ice cream. 



2 cups (heaping) chopped peeled Zucchini 

1 TB butter

2 TB. Fresh squeezed lemon

1/8 ts + 2 Smidgen scoops 

Stevia Select pure stevia Powder 

1 1/2 TB Powdered erythritol 

2 ts cinnamon 

1/4 ts nutmeg 

1/8 ts ginger powder

Dash salt or 1 Smidgen scoop





  1. *I quartered 2 med. zucchini lengthwise 

Then chopped that into 1/2 inch cubes. 

Yield 2 slightly heaping cups.

  1. Brown Butter by heating in in a saucepan.

Watch constantly and stir as it burns quickly.

  1. Add all ingredients to butter except

chopped zucchini. Stir to combine. Then

add zucchini. 

  1. With lid on, simmer about 10 min. Timing

depends on how firm you want your “apples”.
