    Moist Banana Bread - Sugar Free, Grain Free, & Dairy Free

    This incerdibly moist Banana Bread is so satisfying with the cinnamon swirl in the middle and the top. Is this Keto/Low-Carb you may ask? When you compare traditional Banana Bread to this sugar-Free Recipe it is. In addition, using Keto flours like Almond and Coconut Flour, make bread even lower in carbohydrates. Since it has real bananas, it won't be for individuals on a strict Keto Diet. However, if your in maintenance mode or simply avoiding sugar, this will be a winner for you! I have eaten a slice on multiple occasions and never saw the scale move the next morning :-)

    Even the pickiest eaters in our family keep begging me to make this Banana Bread recipe. It's become a Saturday morning favorite for our weekend "special" breakfast. I trust your family will enjoy it as much as our does.

    Moist Banana Bread - Sugar Free, Grain Free, & Dairy Free

    Ingredients:

    • 1 cup Coconut Flour
    • 1 cup almond flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1 ts. xanthan gum
    • 1/2 ts. salt
    • 1 tbsp ground cinnamon
    •  2 large bananas
    • 1/4 cup Erythritol or sugar sub of choice
    • 1/4 ts. Pure Stevia Powder
    • 1/2 + 1/4 tsp. Vanilla Stevia
    • 1 tsp vanilla extract
    • 1/2 cup Butter softened
    • 3 large eggs
    • 1 C. Chopped Walnuts *optional

    Cinnamon Swirl Ingredients:

      • 1/2 C. Finely Chopped Walnuts or nut of choice
        • 1 TB. Ground Cinnamon
        • 1/2 C. Erythritol

             

            Instructions:
            • Preheat the oven to 325 F. Line a loaf pan with parchment paper and set aside.
            • In a large mixing bowl, add your dry ingredients, mix, and set aside. In a separate bowl, add your mashed bananas, maple syrup, and vanilla extract, and mix until combined
            • Bake 30 minutes and then cover for an additional 20 minutes baking time.
