Low-Carb Pumpkin Spice Doughnuts usher in a special feeling for the Fall Season. Even though these are sugar-free, they taste just as amazing as our sugar filled friends.
Moist and tasty cake inside, sweet maple glaze to coat the outside. Who could ask for anything more?!
There's just something about a doughnut that makes me feel like a kid eating something indulgent. Doughnuts were always counted as a "special treat" and we didn't get them often. I suppose this is why I feel like I'm splurging when I eat one.
These really come together quickly and will definitely satisfy any pumpkin spice cravings.
Pumpkin Donuts with Maple Glaze
Ingredients:
Yields 4 - 6" large donuts
- 1 C Almond Flour
- 1 C. Coconut Flour
- 1/2 C. Butter
- 1/2 C. Allulose
- 2 Large Eggs
- 1/2 ts. Pumpkin Pie Spices
- 3/4 C. Pumpkin Puree *not pie filling
- 1 ts Pumpkin Spice Stevia
- 1 ts Baking powder
- 1/2 ts Salt
- 1/4 ts Xanthan Gum
Directions:
- Preheat oven to 350 F
- Grease silicone doughnut mold. *I have a large mold so it made only four.
- Cream together the butter, stevia baking blend until light/fluffy. Approx. 2 min.
- Add eggs, pumpkin puree, and pumpkin spice stevia now. Mix until incorporated.
- Add the remaining ingredients (flours, salt, Allulose, Xanthan gum). Beat on med. until combined. Dough will be stiff/thick. This is typical with coconut flour.
- Divide dough evenly into doughnut molds. Since batter it thick, you will need to use a spatula to press firmly into the molds. These will not rise much so fill to the top of the mold.
- Place into oven and bake 20-25 minutes. Remove when toothpick inserted comes out clean.
- Gently turn these onto a cooling rack to avoid sweating inside the molds.
- Make maple glaze and dip each doughnut into glaze to cover tops.
Maple Glaze Ingredients;
- 1/4 C. Allulose
- 1 TB. Cream, half-n-half... Dairy Free options: Almond, Cashew, or Coconut Milk
- 1/2 ts. Maple Stevia
Directions: Mix until smooth, all glaze ingredients, in a wide-mouthed small bowl. This will allow easy dipping. Use a hand mixer to blend completly.
