    This incredibly moist Banana Bread is so satisfying with the cinnamon swirl in the middle and all over the top. Is this Keto/Low-Carb you may ask? When you compare traditional Banana Bread to this sugar-Free Recipe it is. In addition, using Keto flours like Almond and Coconut Flour, make bread even lower in carbohydrates. Since it has real bananas, it won't be for individuals on a strict Keto Diet. However, if your in maintenance mode or simply avoiding sugar, this will be a winner for you! I have eaten a slice on multiple occasions and never saw the scale move the next morning :-)

    Even the pickiest eaters in our family keep begging me to make this Banana Bread recipe. It's become a Saturday morning favorite for our weekend "special" breakfast. I trust your family will enjoy it as much as our does.

    Moist Banana Bread - Sugar Free, Grain Free, & Dairy Free

    Ingredients:

    • 1 cup Coconut Flour
    • 1 cup almond flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1 ts. xanthan gum
    • 1/2 ts. salt
    • 1 tbsp ground cinnamon
    •  2 large bananas
    • 1/2 cup Xylitol
    • 1/2 + 1/4 tsp. Vanilla Stevia
    • 1 tsp vanilla extract
    • 1/2 cup Butter softened
    • 3 large eggs
    • 1 C. Chopped Walnuts *optional

    Cinnamon Swirl Ingredients:

      • 1/2 C. Finely Chopped Walnuts or nut of choice
        • 1 TB. Ground Cinnamon
        • 1/2 C. Xylitol

             


            Instructions

            • Preheat the oven to 325 F. Line a loaf pan with parchment paper and set aside.
            • In a large mixing bowl, cream the Xylitol and butter until lighter in color. Approx. 2 minutes.In a separate bowl, mash the bananas, then add to butter/sugar batter and combine.
            • Now add eggs 1 at a time and mix till creamy. Vanilla and stevia vanilla should be added now and blended in.
            • Toss in remaining dry ingredients and mix until incorporated.Batter will be stiff.*If adding nuts, put these in last and hand stir to avoid crumbling nuts smaller.
            • To create a marbled swirl look, place uneven scoops of batter into the loaf pan creating an uneven surface. Use half of batter in this step.Sprinkle swirl ingredients over batter making sure to save half the swirl for the topping.
            • Add remaining batter and then sprinkle with the rest of the swirl ingredients.
            • Bake 30 minutes and then cover with foil for an additional 20 minutes. Allow to cool 10-15 minutes before removing loaf by holding to edges of the parchment paper to lift it out. Cool on cooling rack for another 10 minutes before slicing. Enjoy a warm slice or freeze sliced pieces and thaw as you want to eat them.
