If your not living under a rock, you’ve heard that Chia Seeds are a super food and powerful antioxidant. The great news is that they have a low net carb count and make a wonderful addition to the Keto Diet or any Low-Carb eating plan.
Adding these tiny seeds to waffles, smoothies, and yogurt has been popular for some time. However, Chia Seed Jelly and Chia Pudding are relatively new comers to the game.
I really enjoy having this pudding on hand for dessert or snacking. The wonderful thing about this recipe is that it takes about 60 seconds to throw together. Then you need the patience to wait for it to set up. For this reason, I typically make one immediately after finishing the last.
Dreamy Sugar-Free Vanilla Chia Pudding
Ingredients:
1 C. Almond Milk
3 TB Heavy Whipping Cream *this is optional but gives a creamier taste. If omitted, just sub more almond milk.
Dash salt
1/4 ts Vanilla Extract
1/2 ts Vanilla Stevia
2 Smidgen scoops Stevia Select stevia powder
3 1/2 TB Chia Seeds
*Optional-grind some fresh vanilla beans for added flavor boost.
Directions:
Place all ingredients, except chia seeds, into a glass jar with a lid.
Shake to combine stevia, salt, and extract.
Now add chia seeds and shake vigorously for a minute.
Refrigerate a minimum of 12 hours or overnight to thicken.
Stir or shake before eating. Seeds may sit at the bottom.
