Maple desserts paired with walnuts is such a classic combination and well-loved by many (including myself).
We created a Keto friendly Starbucks Copycat Coffee Cake that is very popular, so I decided to use this a springboard for a low carb Maple Walnut version. This sugar free coffee cake came out as delicious as the original recipe. Of course it tastes quite different with the added maple stevia and walnuts always lend a unique aroma. Try both and let us know which you like best.
We love to enjoy this on lazy weekends when it’s fresh & hot from the oven. However, don’t worry if you have leftovers. Freeze and bag each piece individually for fast thawing. Great to grab for a breakfast on the go.
Sugar Free Maple Walnut Keto Coffee Cake
Cream together the following:
4 TB butter *softened
1/4 c. Stevia Baking Blend
1/2 ts Maple Stevia
1/2 ts Vanilla Extract
After the above is creamed, add:
2 eggs *beat in 1 at a time
1/4 c. Sour cream
Place all the dry ingredients below in a sifter.
This will be added to the batter above.
1 c. Almond flour
2 1/2 TB. Coconut Flour
1 ts baking powder
1/4 ts baking soda
1/4 ts nutmeg
1/4 ts Xanthan gum
Now combine wet and dry ingredients with a mixer.
