Dairy-Free, Sugar-Free Strawberry Ice Cream
Recently, my daughter has been on a dairy-free diet which has led me to some creative experiences. This particular strawberry ice cream was part of a Birthday Bash held for her 19th birthday.
We were all incredibly surprised at how “regular” it tasted. My daughter is especially “sensitive” to the taste of stevia and although she’s not opposed to it, she would always prefer white sugar. However, this sugar-free ice cream was truly delicious.
You will find most of our recipes have 2 stevia products used to sweeten, and some even have three. This is one of the ways to get the best experience from baking or dessert making with stevia. Here’s why:
1. Pure stevia is bold and very sweet/concentrated. This is perfect for a base. It’s a great way to get the sweetness to a certain level. However, using to much of this will create an off, slightly bitter after taste. This is not what we want.
2. Stevia Liquids are not as concentrated and can be used to “boost” the sweetness plus they add a great flavor to your desserts. For example, I like to use the lemon stevia in many fruit dishes. The tartness enhances most fruit flavors and makes them bolder. Along those same thoughts, Chocolate Stevia enhances Chocolate, and Caramel Stevia lends a brown sugar taste to any recipe😋
3. Lastly, our Stevia Baking Blend is the closest thing to actual sugar that you an find. Using a small amount of this will keep any stevia taste at bay and truly allow you to just enjoy a sweet dessert.
